Yummy Mexican Snacks



  • 250g Beef mince
  • 1 Onion
  • 1/2 Nutmeg
  • 1 tsp Paprika


  • 1 Garlic clove
  • 1/2 Lemon
  • 1 Spring onion
  • 1 Tomato
  • 1 tbsp Coriander
  • 1 Long red chilli


  • 1 Avocado
  • 1 tbsp Goat’s cheese


  • Olive oil
  • Salt & Pepper
  • Sweet chilli sauce
  • 1 tbsp Goat’s cheese
  • Wraps


For those of you that ain’t so good with the words…

First things first. Preheat that oven of your’s to 180°C/355°F

The meat filling

  1. Dice the onion nice and fine
  2. Add a splash of olive oil to a hot pan with the onions and saute for 2-3min
  3. Add the beef mince to the onions and season well with salt and pepper. Now grate over the nutmeg and cover with paprika
  4. Mix it well and cook for 10 min on a medium high heat or until the mince has browned completely. Remove from the pan and set aside ’till assembly time

The salsa on top

  1. Crush the garlic and submerge in the juice of half a lemon (this weakens the strength of the garlic, which is great when serving it raw)
  2. Slice the spring onion into diamond shapes
  3. Chop the tomatoes into small cubes
  4. Finely chop the coriander
  5. Deseed the chilli and finely slice
  6. Now add the above into a bowl and mix well. Season to taste and set aside for later

The homemade guacamole

  1. Add entire avocado to a bowl (without the skin of course)
  2. Add 1 tbsp of the goat’s cheese to it and season to taste
  3. Crush and mix until a smooth paste

The assembly

  1. Use a cup or even scissors to cut out perfect smaller circles out of the wrap
  2. Add the smaller circles to a muffin pan to fit it perfectly, this is now your taco shell
  3. Add a splash, about 1 tsp, of sweet chilli sauce to each cup. This just gives it a bit of extra flavour and also ensures it doesn’t dry up
  4. Fill each cup with a heaped tbsp of the beef mince, and top off each of the shells with the rest of the goat’s cheese
  5. Put these bad boys into the oven for about 15min. Check on them regularly
  6. When the timer goes off, carefully remove them from the muffin tray
  7. Add a good heap of guacamole to each shell and then top them off with some salsa
  8. Finally, grab one and stuff your face

These are perfect for a pre-dinner snack, but also work great as a main meal if you make enough of them.
